Dehydrated spicy okra chips

Okra is one of my favorite veggies, is very nutritious with all the pectin fiber. Great snack for diabetics. This is a very healthy snack. No need to add even one drop of oil. Think how much oil we use to fry okra on the skillet. I was very happy when I learnt this dish. This dish is my own creation.

 

Cut okra into thin wheels, marinate with salt(I use very little), chilly powder, curry powder for one day and dehydrate at 100 degrees for 7-9 hours.

    We live in India . I did not understand what is dehydrating of okra meant. Please explain what can we do if we donot have a microwave.the dish looks yummy and healthy .

      Great investment for good health. Make good use of it. Sun dried tomatoes is another useful item to make in dehydrator. I will be posting more recipes to make in dehydrator. Please stay tuned!

      Yes, absolutely. You can make it in sunlight if it is very hot, otherwise you will be spoiling the dish when night temperatures fall. You will have to deal with contaminants from wind when you sundry. In hot weather you can try sun drying, but make sure you bring them inside at night to avoid the dew. You don’t have to worry about all these things in dehydrator.

    This sound wondeful. I am in Dehra Dun, India. The local house appliance shops do not have the “DEHDRATOR”. Could you advise some supplier in india or some alternative method for making it.

      No they both are different. Okra is Bhindi. Bitter-guard is Karela. If you make Karela chips like this, they will be bitter, the recipe is different for karela chips.

    When we marinate do we keep it in refrigerator for a day? Also what is curry powder – do we get it from Indian store or can be made home?

      The more time you marinate, the better it tastes, you need to marinate at least for 4-6 hours. I marinated for 2 days I think. You will find curry powder in Indian or Asian stores.
